Ingredients:
-1/2 cup white rice
-1/2 small onion, diced
-1 garlic clove, minced
-1/4 teaspoon ground ginger
-1/4 teaspoon salt
-1/8 teaspoon black pepper
-2 tablespoons vegetable oil, divided
-1 large egg, beaten
-3/4 cup frozen peas and carrots, thawed
-1/2 pound cooked shrimp, peeled and deveined
-3 tablespoons soy sauce

In a medium saucepan, bring 1 cup of water to a boil. Add the rice and stir to combine. Bring to a low simmer and cook until the water is absorbed and the rice is cooked through, about 10 minutes. Remove from heat and fluff with a fork. Set aside. In a large skillet over medium high heat, add 1 tablespoon of oil. Add the onion and garlic and sauté until both are translucent. Stir in the ginger, salt and pepper until combined then add the cooked rice. Sauté for 2 minutes then push everything to one side of the pan making a well in the center. Pour in the remaining tablespoon of oil then add the beaten egg to the center. Allow it to cook for 30 seconds undisturbed then scramble it into the rest of the rice mixture.
